You use the Point Layer Symbol Manager dialog box to add symbols.  For detailed information, choose Help Contents, click the Index tab, and look up "symbols, adding for point layers." Adding New Symbols for Use in Point Layers

Setting Display Styles for Text Layers
You can specify the font, color, background, alignment, height, and rotation
of text layer features. To specify styles for text layers, double-click a style in
the Styles tab of the Map Layer Properties dialog box to display the Text Style
dialog box.
